Chop into florets and cook in water for 6 minutes with a pinch of salt.

BEETROOT (BEET)

Grate the beetroot and cook in a saucepan with a little water for 10 minutes. Add some freshly grated ginger and some grated nutmeg. Stir occasionally and add a little salt and pepper to taste.

CORIANDER AND ORANGE SAUCE

170g (¾ cup) mung dhal

1 litre (4½ cups) water

1 heaped tsp salt

1 heaped tsp turmeric

Juice of an orange

2 heaped tsp ground coriander seeds

1 Bring the mung dhal to the boil in the water, add the salt and turmeric, and cook for 1½–2 hours until the mixture is very smooth, whisking frequently to prevent sticking.

2 10 minutes before the end of the cooking time, add the orange juice and the coriander seeds. Stir thoroughly to mix and serve.
